Suckling à la Réunionnaise

1 suckling of 25-30 kg
Stuffing
4 kg of sausage meat
Bread white,
Breadcrumbs,
Sweet peppers, red, green and yellow,
Onions,
1 kg of shallots,
Caraway,
Cardamom,
Turmeric,
Ginger,
Salt, pepper
Serve with:
6 Victoria pineapples (of la Réunion),
2 kg of bananas (36 small),
3 papayas,
1 kg de litchis,
1 kg of mangoes.
Mix the sausage meat, bread white, breadcrumbs, red, yellow and green sweet peppers, onions and shallots.
Once the mixture is homogeneous, flavour it with rum (to your taste) and add spices: cumin, cardamom, turmeric ginger, salt and pepper.
Stuff the suckling and cook.
To accompany this stuffed suckling add a hot fruity exotic garnish (pineapple, bananas, papayas, litchis, mangoes).
Before serving, flambé the suckling with rum!
